BAKED CRUSTED SALMON

Ingredients

½ cup mayonnaise
1/3 cup panko
½ cup grated Parmesan cheese
1 Tbsp. Polynesian Pineapple Rub & Seasoning
1 tsp. black pepper
¼ cup parsley, finely chopped
6 salmon filets

Instructions

Preheat oven to 425°F. In a small bowl combine mayonnaise, panko, Parmesan cheese, Polynesian Pineapple Rub & Seasoning, pepper and parsley; mix until blended. Place salmon skin side down on a foil lined baking sheet. Spread the mayonnaise mixture over the top of the salmon filets. Bake salmon until the internal temperature reaches 145°F, about 10-15 minutes. Salmon can also be cooked on the BBQ on a sheet of foil.
